Since today is our rest and relaxation day I figured that a cool, minty Mojito would be ideal for our “drink of the day.” This drink brings me back to when I was in Cabo San Lucas, Mexico ordering mango and strawberry Mojitos! Well, today is the day to make your own. They are very easy and mighty tasty!
Ingredients:
– 1.5 oz Bacardi Rum
– 12 fresh spearmint leaves
– 1/2 lime
– 7 oz sprite zero or club soda
– 2 tbsp. Sugar (or if you would like to reduce the calories use Splenda)
Note: this recipe is for one glass, I usually just make a big pitcher of this yummy concoction, so just eyeball the ingredients and add more to taste.
Directions:
In a cool tall glass, muddle the mint, sugar (or Splenda) and lime juice. This basically means that you crush the mint, squeeze the limes, toss in the sweetness, and mash it all with a spoon! Add crushed ice. Add rum, soda and stir well. Garnish with a lime wedge and a few sprigs of mint. Serve and enjoy!
